One Pot Creamy Mexican Chicken:

Chicken is boring and doesn’t have enough flavour? Not in our books! Try this ultimate comfort food. Tender chicken, simmered in a creamy sauce with Mexican spices for a hassle-free and delicious meal that will wow the whole family (and ready in under 30 minutes!)

Ingredients:

  • 20ml extra virgin olive oil
  • 4x small chicken breast
  • 2tbsp mexican spice powder
  • 0.5tsp garlic powder
  • 1tsp salt
  • 0.5tsp cracked pepper
  • 1x brown onion
  • 4x spring onion
  • 1tbsp tomato paste
  • 2x capsicum
  • 200ml reduced salt chicken stock
  • 100grams frozen peas
  • 190grams low fat cream
  • 30grams low fat cheddar cheese
  • 150grams unsalted corn chips

 

Method: 

Step 1

Heat olive oil in a skillet over medium heat. Next, trim the fat off the chicken and season with 1 tablespoon of the Mexican spice powder and half each of the salt and pepper. Cook for 8-10 minutes, or until golden and no longer pink in the centre. Remove from skillet and set aside.

Step 2

Chop brown onion into thin slices, slice capsicum into long strips, then chop spring onions into matchstick pieces (if using). To the same pan, stir in the onions and capsicum. Cook until fragrant and slightly softened, about 4 minutes.

Step 3

Add the tomato paste and remaining 1 tablespoon of Mexican spice mix, garlic powder, salt and pepper. Cook for 2 minutes, or until the paste has darkened in colour, stirring regularly.

Step 4

Deglaze the pan with 80ml of stock. Once slightly reduced, return the chicken to the pan and add the remaining stock, frozen peas and cream. Bring to a simmer for 4-5 minutes, or until the chicken is cooked through, then add the cheese and stir until melted. Divide amongst four plates and serve with tortilla chips.
