Family friendly dinner recipes under $5 per serve

With the cost of living on the rise, grocery shopping is becoming evermore overwhelming, with some of our favourite veggies becoming ludicrously expensive (ahem lettuce). We did some cheeky maths this week by taking 5 of our most loved dinner recipes that serve 4 and broke it down to the cost per serve.*

 

One Pot Lasagna

If you haven’t tried this recipe out you’re seriously missing out! This recipes allows you to enjoy those traditional Italian lasagna flavours you know and love but without the time commitment. Who knew that lasagna could be so easily prepared over the stove?!

This is a sure fire recipe to impress the family and have everyone wanting more and the best news is, is that it’s only $4.75 per serve!

It’s also a recipe that works so great as meal prep. We highly recommend that you get this one on your radar.

 

Cauliflower and Chickpea Tikka Masala (VEGAN)

Jam packed full of fibre and needing only 10 ingredients, this is great for anyone that’s plant based or looking to integrate some meat-free meals into their week. Served with brown rice, this Indian inspired dish is an absolute bargain costing only $2.14 per serve.

If you’re looking to make this one even cheaper you can opt for white rice instead of brown rice.

Like many other saucy / curry styles dishes this is a great option for meal prep and honestly as the week goes on, the flavours will get even better.

 

Veggie Minestrone (VEGAN)

Another delicious and hearty meal that we think you should get on your radar. We can’t speak more highly of this one as it’s jam packed full of veggies which Liv continually tells us to eat up as they’re vital to help us support our immunity in the cooler months.

Coming to only $3.01 per serve, this recipe is a must try.

Just a little note, in our cost analysis we used macaroni pasta, however if there’s another pasta shape that you prefer like risoni, orecchiette or small shells, we say go for it!

 

Baked Gnocchi 

Get ready for some cheesy goodness with this dish. Baked gnocchi is one of our favourite comfort foods for cooler nights or when we just want to enjoy a meal that feels like a warm hug.

If you’re a whiz in the kitchen you can absolutely make your own gnocchi, but for anyone shorter on time or not willing to risk a disaster (this is us), opt for store bought. In our cost per serve analysis, we’ve assumed that the gnocchi is store bought.

We did a little happy dance when we discovered that this recipe costs only $3.33 per serve. Insane.

 

Eggplant Pasta Bake (VEGETARIAN)

There’s no doubt that you’ve either seen or heard Laura talk about this recipe and there’s a reason why – it’s damn DELICIOUS and perfect for meal prep.

This recipe only needs a mere 7 ingredients, so it’s super easy to make and budget friendly too, win!
