1. Asian Atlantic Salmon Salad
Kicking off with one of our absolute favourites from this collaboration with Pinch of Maddie. If you know KIC, you know we love all things salmon, and we think you’ll love this dish too. Not only is it super easy to make, but it will be an absolute crowd pleaser for your next get-together. Enjoy it with friends, family or for yourself
2. Charred Zucchini & Corn with Minty Vinaigrette
Perfect as a salad or as a side, this charred zucchini & corn salad is ideal for any time of day or occasion. It’s office friendly as a packed lunch, a great platter to bring along to an event and pairs well with your choice of protein! For this dish, we’d suggest a can of tuna.
3. Creamy Avo, Coriander & Lime Pasta Salad
A pasta salad with a Mexican spin? Big tick! This zesty avo pasta salad is one you need on your radar stat. Serve it alongside some corn chips if you’re feeling extra fun. The name of this dish says it all – you’ll need Kic chickpea pasta, avos, coriander, lime juice, corn, red onion and greek yoghurt.
4. Greek Lemon Chicken & Lentil Pasta Salad
Carbs and protein with a hint of zing! Yes please! This pasta salad is a must try for your next lunch or dinner. Think olives, cherry toms, Kic chickpea pasta, chopped cucumbers, feta and chicken breast for your punch of protein. No chicken? No worries. You can go without and it will be just as delicious.
5. Peach & Pesto Caprese Salad
Caprese salad, but make it peachy! You heard us. This dish is the perfect summer side to any choice of protein or even as it’s own starter before the main. Soft, sweet and savoury, it’s a delicious dish that takes no time to make and only requires a handful of ingredients – peaches, tomatoes, mozzarella, pesto, rocket and basil.
6. Prawn & Mango Salad
Now, who can say no to a juicy prawn salad? Add some slide mangos to the mix and this flavour combo will have you coming back for more. Serve with a delicious dressing inspired by nahm Jim sauce and get ready for your taste buds to pop. The more coriander, the better!
