Steph’s Lettuce-Free Salads

With lettuce being so wildly expensive at the moment, I’ve needed to think outside the box when it comes to whipping up delicious salads. 

The KIC recipe hub has been an absolute life saver. It’s got countless delicious salads, some designed to be meals on their own and others designed to be a side and accompany a meal.

I’ve pulled together a list of my top five salads that won’t cost you an arm and a leg, they’re all so different but all so delicious! 

1. Fennel and Orange Salad

This salad is a little on the boujee side but not in terms of the ingredients or its preparation (it’s actually the easiest one of the lot taking less than 10 minutes to make), but more in terms of the flavours! I was so surprised at how well the aniseed flavour from the fennel worked with the orange when I tried this recipe for the first time! You’re guaranteed to impress when you whip up this salad. 

2. Beet and Nut Salad

Nothing ‘beets’ this epic 7 ingredient salad recipe (ha, get it?). I’m not sure if it’s the goats cheese, the walnuts, or beetroot – or the combination of all three – but my family couldn’t get enough of this salad the last time I made it! 

3. Roasted Root Vegetables, Cranberry and Quinoa Salad

Packed with sweet potato, dried cranberries and pumpkin seeds, this recipe is super colourful, simple to make and has a really wintery vibe to it – perfect for the current Melbourne weather. It will be delicious alongside some BBQ meats and it keeps well in the fridge if you happen to have left overs! 

4. Tasty Potato Salad

Honestly, who doesn’t love a spud.  I’ve made this one before and it’s a perfectly light and creamy potato salad unlike many others I’ve tried before. It’s had the thumbs up from my family before, so I know it’ll go down well. You do however have to start the prep for this one the night before as the cashews need to soak – it’s no biggie, just something to think about.

5. Pasta Salad

I love that this pasta salad works as meal prep or an option to keep up my sleeve for any event just like a family BBQ! What I love most is that it keeps so well and can be served straight out of the fridge, no heating required… Unless you prefer it that way!
