You may or may not know this about me, but I love a good snack. Whether it’s a simple snack like a piece of fruit, some popcorn or something a little more involved like a homemade baked goodie or smoothie, my days are powered heavily by good, nutritious snacks between my main meals.
When it comes to snacking over the summer months, I like opting for light, fruity and refrigerated snacks as I find they compliment the summer weather best, plus can be a little more refreshing. Even better is that at the beginning of January when I’m working from home/remotely a little more, it means I can pop to the fridge during the day and enjoy those snacks that need to be kept in the fridge until served.
This summer I’ve had the following snacks on rotation. If you haven’t already tried them, you need to ASAP!
Coconut in any shape or form never fails to remind me of summer. I love the coconut flavour, it’s fruity, milky and sweet and I love it even more when it’s combined with other ingredients I love and this recipe does just that! Like the name suggests, in this recipe, the coconut is combined with peanut butter and chocolate to create a delicious snack.
These bites need only 7 ingredients and require no baking, just some time in the fridge to set! I personally like to leave them in the fridge until I’m ready to enjoy one or two as I love them cold. They’ll keep well in an airtight container in the fridge for up to 10 days!
No Bake PB & Choc Slice Peanut butter and chocolate are a match made in heaven. And this particular recipe includes very few ingredients and zero baking, making it so easy to put together.
I also personally love making this for any time I’m having friends or family over for an afternoon – it’s a crowd pleaser for sure!
It holds best in the fridge, making it the perfect slice to indulge at home in summer!
These are on high rotation in my house – I make them at least twice a month, I kid you not, they are an absolute staple snack in my house no matter the time of the year. Josh and I never fail to devour these within days of them being baked.

This is hands down one of the easiest but yummiest snacks out there! It’s actually PERFECT for summer because it’s easy prep, it’s frozen and hits the spot anytime I’m having a sweet craving and want a little something something to pick up my mood.
If you’re not a fan of peanut butter you can totally sub in your preferred nut butter.
Another reason I love this snack is because you can make these way in advance and have countless of them ready to go for when you need them.
I can’t describe how damn well the sweetness of the date works with the saltiness of the peanut butter and when frozen they’re taken to the next level. Don’t believe me? Try them for yourself!
This has to be one of my favourite pick-me-up smoothies for a hot day. The reason I love this smoothie is because this recipe includes a cheeky shot of espresso which never fails to give me an extra boost. Even better is that it incorporates protein powder to help support my daily protein intake.
If you want to make this smoothie extra cold, you could add ice by either blending it through or pour your smoothie it over ice but keep in mind that as the ice melts it may make your smoothie a little runnier.
