This is the ultimate pancake recipe for those of you who like us, can never manage to flip your pancake over in a pan without making a grand mess! Baked in the oven and forming one GIANT pancake also means that your cooked pancakes won’t get cold while waiting for the next. All you need to do is bake, slice, top and serve!
This recipe is so simple and will have you enjoying a perfectly fluffy pancake breakfast or brunch – which we know will help make your morning just that little bit sweeter.

Step 1
Heat oven to 160°C. Grease a baking tray/sheet pan with coconut oil.
Step 2
Melt 1 tablespoon of coconut oil and set aside.
Step 3
In a large bowl, add flour, baking powder, coconut sugar, cinnamon powder and salt. Mix to combine. Add the egg, milk, melted coconut oil and vanilla to the dry ingredients and whisk to combine.
Step 4
Chop strawberries into thin slices. Pour the mixture into your prepared baking tray and place the strawberries on top. Bake for 20 mins or until a skewer comes out clean.
Step 5
Once baked, slice into pieces and serve with your choice of toppings.
