Looking to get your bake on but don’t have a lot of time to spend in the kitchen? We’ve taken a timeless and classic afternoon tea snack and put our healthy spin on it – introducing KIC’s simple scone recipe. With only 7 ingredients and 30 minutes required, these scones are seriously simple and easy to whip up. We know these will become a favourite, especially when served with your favourite jam and cream.

Ingredients

370g self raising flour
3tbsp caster sugar
1tsp baking powder
1/4tsp salt
85g vegan butter
200ml low fat soy milk
1tsp vanilla extract
150g dairy free yoghurt (or low fat cream)
100g your choice of jam

Method

Step 1

Preheat oven to 200°C and line a tray with baking paper.

Step 2

Sift 350 grams of flour into a large bowl; then add sugar, salt and baking powder, then mix.

Step 3

Add the butter and rub in with your fingertips until the mixture resembles fine breadcrumbs.

Step 4

Gradually mix in 175ml of the milk and vanilla extract until a smooth dough forms.

Step 5

Turn dough out onto a lightly flour-dusted surface. Knead gently for 10-20 seconds, to ensure everything is combined. Roll into a large rectangle, approximately 2cm thick. Then use a 5cm circle cookie-cutter to cut dough into rounds, then place onto your lined baking tray.

Step 6

Brush the scones lightly with the remaining 25ml of milk then bake for 10-12 minutes, or until golden and well risen.

Serve warm with jam and dairy free yoghurt (or low fat cream).
