Move over regular stove top and microwave oats because baked oats are here and are stealing the spotlight. Although designed as a breakfast recipe, you’ll be feeling like you’re eating dessert as the ingredients are all combined, turned into a batter and then baked, just like a cake!
Don’t fret if you don’t have blueberries on hand, this recipe will work with strawberries, raspberries, blackberries, apple or if you’ve got a chocolate craving – choc chips!
We love how much you can customise your baked oats. Whether it be changing the fruit used as suggested above or trying a different spice in place of the cinnamon like nutmeg or allspice or adding a crunch by sprinkling some toasted coconut or almond flakes on top before baking – the flavour profile that you give your baked oats is truly in your hands.
If you’re not a yoghurt fan, you can also serve your baked oats with a drizzle of honey or a dollop of your favourite nut butter!
Step 1
Preheat oven to 180°C and grease a small ramekin or oven-proof dish (approximately 8.5cm diameter). Add oats, milk, banana, baking powder, vanilla extract, chia seeds, maple syrup and cinnamon to a blender and blend on high speed for 1-2 minutes, or until everything is combined.
Step 2
Pour batter into your greased dish and scatter frozen blueberries on top. Place in oven and bake for 20-25 minutes, or until a skewer comes out clean. Serve and enjoy with greek yoghurt.
