Step 1
Use a fork or sharp knife to pierce a sweet potato 5-7 times. Microwave on high for about 4-6 minutes, (depending on the size of the sweet potato and on your microwave) or until cooked through.
Step 2
Slice the sweet potato and fill with onion, beans, avocado and rocket.
Step 3
Mix the almond butter, orange juice and chilli powder together and drizzle over the top – then sprinkle over hemp seeds to serve!
