If you’re craving a wholesome dinner, you’re in for a treat! As the weather gets cooler, we love making a hero of hearty, nutritious vegetables when we’re cooking. This Mexican-style baked sweet potato recipe is a current fave of the KIC squad. We can’t wait for you to see what all the fuss is about!

Ingredients

130g sweet potato

20g red onion finely chopped
130g canned black beans
35g avocado (diced)
1 handful rocket
1 tbsp hemp seeds
15g almond butter
15ml orange juice
Pinch chilli powder

Method

Step 1

Use a fork or sharp knife to pierce a sweet potato 5-7 times. Microwave on high for about 4-6 minutes, (depending on the size of the sweet potato and on your microwave) or until cooked through.

Step 2

Slice the sweet potato and fill with onion, beans, avocado and rocket.

Step 3

Mix the almond butter, orange juice and chilli powder together and drizzle over the top – then sprinkle over hemp seeds to serve!
