Combining two of our favourite ingredients, chocolate and peanut butter, our Peanut Butter Rice Crispy treats will be sure to satisfy your sweet craving. We love this recipe for not only is it super simple to put together but it’s also one that for many of us will bring on a lot of nostalgia.
Whenever we take a bite, the crunch of the puffed rice never fails to momentarily transports us back to our childhood, reminding us of all the chocolate crackles at parties and bowls of rice bubbles at breakfast!
This recipe is also great for all of our KIC mummas as it’s a super simple if you wanted to get the kids involved too.

Step 1
Blend the dates, coconut oil, peanut butter, vanilla extract and honey until a thick paste forms. Add some warm water, 1 tbsp at a time, if it won’t blend. Don’t add more than a ¼ cup in total or the mixture will be too wet.
Step 2
In a large bowl, mix the puffed rice and a pinch of salt with the peanut butter mixture until combines. Press this mixture down into a lined baking pan and place in the fridge for half an hour to set.
Step 3
Once this mixture is set, melt the dark chocolate and layer on top. Place back in the fridge to set the chocolate. Finally cut into desired pieces with a sharp knife. Store in a container at room temperature for up to 4 days.
