This recipe brings together two of our favourite things – banana bread & brownies! It is the perfect snack enjoy at work, when working from home, for the kids’ school lunch box or simply to enjoy the act of cooking or meal prepping as short and sweet weekend activity. Need we say more to convince you to get baking?!
Step 1
Preheat the oven to 175 degrees Celsius and line a 20cm x 20 cm tin with baking paper. Mash the bananas & place in a large bowl with the olive oil, maple syrup, eggs 65ml of milk and vanilla. Whisk well to combine.
Step 2
Add the plain flour, bicarbonate soda, salt and cinnamon. Stir gently with a wooden spoon. Transfer 3/4 of the mixture to your lined baking tin, then add the cacao powder and remaining 5ml of milk to the leftover batter. Stir to combine. Pour the chocolate mixture over the plain and use spread gently. Top with chocolate chips.
Step 3
Bake for 40-45 minutes, or until a skewer comes out clean. Wait until the brownies have cooled completely before slicing.
