Stay warm with Steph’s favourite winter soups

Wet, windy and cold weather calls for only one thing… Soup!

Soups make me feel all warm and fuzzy, they’re always jam packed with so many veggies and they’re so easy to prepare, honestly, what’s not to love about soups? 

Soups are one of my go-to recipes for meal prep. I love doubling the recipe then freezing it into individual servings so that I can have lunch ready for the days I’m at the office and too time poor to make something fresh. I’ll simply pull the soup out of the freezer the night before and leave it in the fridge to slowly thaw and then in the morning I’ll simply grab it and go as I’m rushing out the door.

Here are my favourite soups from the KIC app, which I highly recommend you get on your radar this winter!

Veggie Minestrone

Ahh the classic minestrone, an all time favourite of mine. I love the Italian flavours, how jam packed full of veggies it is and that I can choose whatever pasta I like! Risoni is ideal as it cooks quickest, but if I want to add in something a little chunkier, I’ll go for elbow pasta (sometimes called macaroni).

A little reminder that the pasta will continue to absorb liquid even after you’ve finished cooking. This means that your soup will thicken up over time and I love when this happens as it makes it even heartier.

Chicken and Corn Soup

I love the texture of this soup! The base is blended and then the chicken is shredded and added back in with the remaining corn – simply perfect if you ask me. This soup also packs a punch of protein which is perfect to support my muscle development.

Easy Pho

I adore Vietnamese food, so much so that I’ll often get a pho or a vermicelli salad when I’m in the office. I just love how fresh and fragrant the flavours are! So, whenever I’m craving those flavours at home, this is one my go to recipes!

Using an array of delicious herbs and spices like coriander and cardamon, it never fails to leave my kitchen smelling incredible and my taste buds delighted. Just a heads up, this soup takes a few hours to prepare as you need to let the broth simmer so that the flavour develops. This is a great soup to make when you’re WFH or even over the weekend when you’ve got some cleaning to do as you can smash out a few hours of tasks while it simmers away.

Dill, Broccoli and Cauliflower Soup

In my opinion dill is such an underrated herb! It’s deliciously fresh and sweet with a slight citrus-y edge. I love how much it elevates this soup! This soup is vegan friendly and when blended it becomes so rich and creamy! When ready to enjoy add a squeeze of lemon or even a drizzle of olive oil to add in some more depth of flavour.

Thai Pumpkin and Cannellini Bean Soup

Ahh pumpkin soup. Mum would make this for us every winter without a doubt as kids,  This KIC soup is a spin on the classic pumpkin soup and I must say, I am utterly obsessed. The Thai flavours elevate this dish so much and the cannellini beans make it so smooth and creamy once it’s been blended. I think you’ll be so pleasantly surprised by how good this soup is – serve it up with some crunchy buttered bread and you’re in for a treat!

Immunity Supporting Italian Chickpea Soup

Having just recovered from the flu, I am making sure to eat to support my immunity and this is the perfect soup to do that with! It’s packed full of veggies and the inclusion of chickpeas gives a great protein boost. This soup ensures my body is getting all the proper vitamins and minerals to help keep my immune system healthy and prevent my chances from getting sick again. It’s a big yes from me!
