Packed full of protein and omega-3 fatty acids, this simple salmon dinner is a winner! With just 7 ingredients you’ll create a fresh and zesty meal. We are also big zucchini fans, especially when we can show off our culinary skills by spiralising it to add another texture to the dish.
Our favourite thing about this dish has to be the dill. We love incorporating dill in any recipe for it brings a subtle sweetness and citrus-like taste to a dish. In this recipe in particular, it truly makes the yoghurt dressing sing. When you top your dish with the dressing and enjoy it with the oiliness of the salmon, the crispiness of the zucchini and the slightly sweet, slightly savoury notes of the peas – you’ll be in heaven with each bite.
Step 1
Using a vegetable peeler or spiralizer, create your zoodles. Next roughly chop your dill and finely grate your lemon. Put some water on to boil for your peas. Cook peas in water for a couple of minutes, drain and set aside.
Step 2
Rub salmon fillets with ½ of the lemon zest and 2 tsp of olive oil. Season with a little salt and pepper. Heat a medium fry pan to a high heat and place salmon skin down. After a minute or so, turn down the heat to a medium heat and cook for a further 3 minutes on the same side. Flip the salmon fillets and cook for a further 3-4 minutes on the other side, or longer if you prefer your fish well cooked.
Step 3
Finally, mix 1 tbsp of lemon juice, dill and Greek yoghurt in a little bowl and season with some salt and pepper. Place your zoodles into two bowls, and dress with 1 tsp of olive oil and remaining lemon juice. Top with salmon and peas. Drizzle with the yoghurt dressing and enjoy!
