We love that this recipe doesn’t involve any “cooking”. Simply combine all the ingredients in your blender, blitz and then all you’ll need to do is get your hands dirty to roll each ball into shape.
Step 1
Soak dates in hot water to soften for 5-10 minutes. Add all ingredients, except the goji berries and coconut flakes, into a blender or mixer and blend until combined into a smooth mixture. Stir through goji berries.
Step 2
Ensure your hands are wet for the next part as this stops the mixture from sticking. Take a spoonful of mixture, use your hands to form into balls. Then roll in coconut flakes to decorate. Place on a lined tray and place in the fridge to set.
