Mother’s Day – it’s the day we dedicate each year to champion and celebrate the incredible women who have given us life, raised us, cared for us and loved us unconditionally.

I think that one of the greatest things alongside these incredible women is food and how it brings people together and facilitates meaningful connections. So, this Mother’s Day I’ll be treating Mum to a beautiful breakfast. Not only will it kick start our day, but it will also give us an opportunity to spend some quality time together.

I thought I’d share with you, my top picks for the ultimate Mother’s Day feed. After much deliberation, because everything is just so mouthwatering, I was able to narrow it down to my top 5.

Strawberries and Cream French Toast

For those of you with a big sweet tooth just like myself, this is one of my go to breakfast recipes (especially when I’ve got a punnet of fresh strawberries on hand). The best thing about this recipe is that it can be made GF by simply opting for GF bread – KIC has your dietary requirements covered! Needing only 7 ingredients, this french toast’s simplicity makes it an even more viable option for those of us who are a little time poor on Mother’s Day.

Green Shakshuka

My second pick is our GREEN Shakshuka – KIC’s take on the infamous Shakshuka. I adore this recipe, for, not only are you getting a seriously hefty serve of your daily greens but it’s also packed full of protein from the eggs. You can also, instead of using store bought pesto, opt to whip up your own adding an even more personal touch to this dish (it could also be sweet to gift mum a jar of the leftover pesto too!).

Avocado and Smoked Salmon Toast

This recipe screams mouthwatering simplicity. For those of you, who like myself, love a little bit of smoked salmon, this recipe will be sure to satisfy that craving. My hot tip is to venture out and grab yourself a freshly baked loaf of bread in the morning – because let’s be real, is there anything better than fresh bread topped with feta, pesto, avo and salmon?!

Miso Mushroom Bruschetta

If you feel like treating mum to something a bit different which has a killer salty and tangy flavour profile, you should try our Miso Mushroom Bruschetta. I love using mixed mushrooms for this dish to spice up the textures and make it a little more fun.

Apple Cinnamon Oat Pancakes

Not only are these bad boys vegan but they combine one of the most timeless and fail proof flavour combos – apple and cinnamon. Side note, if you’ve got a little extra time on your hands I also love using poached apples instead of fresh ones – this will take your stack of pancakes to the next level.

Ingredients

150g spelt flour (or plain)
15g oats
5g baking powder
Pinch of sea salt
9g coconut sugar
9g ground cinnamon
125ml regular soy milk
10ml vanilla essence
20ml apple cider vinegar
20ml coconut oil, melted
185g apple, cored and thinly sliced
125ml non-dairy vanilla yoghurt (coconut yoghurt)
20ml maple syrup to drizzle

Method

Step 1

Place the flour, oats, baking powder, salt, sugar and cinnamon in a mixing bowl and whisk together. Add the milk, vanilla, apple cider vinegar and melted coconut oil, and whisk to combine.

Step 2

Spray a non-stick frying pan with a little coconut oil and place over medium high heat. Pour some batter (1/8th of the mixture) into the pan and cook for about 1 minute, before flipping over to cook the other side. Makes 8 pancakes.

Step 3

To serve, top with thin slices of apple, a dollop of yoghurt and a drizzle of maple syrup.
