Roasting all the ingredients together brings out the sweetness of the capsicum and leaves the chicken breast flavourful and tender, not to mention the array of spices making the dish sing. And the best bit? It’s all cooked in the one pan, which means minimal dishes, and maximum smiles all round.
Remember, you are not limited to just the ingredients listed. Feel free to add any extra veggies you have on hand, whether it be zucchini, mushrooms, or tomatoes – anything to add that extra bit of goodness.

Step 1
Preheat oven to 200°C and line a baking tray with paper.
Step 2
Slice capsicum, peel and slice onion into wedges and cut chicken into strips and transfer to a large bowl. Add the olive oil, chilli powder, cumin, coriander, paprika, garlic powder, salt and pepper to the bowl. Toss to combine, ensuring everything is well-coated in the spices then transfer to your lined baking tray and spread into an even layer.
Step 3
Roast for 15-20 minutes, or until cooked, then remove from oven.
Step 4
Serve the fajitas in warmed tortillas with a garnish of coriander leaves and a squeeze of lime juice.
Step 5
Feel free to use your preferred colour of capsicum; there’s no need to have both red and yellow.
