5 ways Laura could have used that eggplant

If you saw my Instagram stories over the weekend, you’ll know that to my disappointment, I discovered a spoiled eggplant hanging out in the back of my fridge.

Food waste is something I try my best to avoid, however I’m not perfect and sometimes things do sit in my fridge or pantry for a little longer than they should and they end up going off.

Eggplants are one of my favourite veggies, Dalt has even started growing them in our veggie patch, so I feel extra guilty for letting this guy go to waste, but hey, I’m only human! 

I thought I’d pull together a list of our yummy KIC recipes I could’ve whipped up, if I had remembered that lonely eggplant sitting in my fridge! 

Miso Glazed Eggplant

This is a Japanese inspired recipe which is flavoursome while also being extremely easy and simple to make. With less than 10 ingredients, and a speedy cooking time, this is one I love to whip up when I’m not overly in the mood to cook.

Just remember that there are so many varieties of miso paste out there and any will work for this recipe, however dependant upon which type you’re using and how salty it is, you may need to adjust the amount of mirin and honey to achieve you preferred marinade flavour.

Eggplant Pasta Bake

This is an oldie but a goldie of a KIC recipe! If you haven’t tried it, it’s a must. It’s a dish that has been making an appearance for Dalt and I consistently since KIC developed it. It’s so easy, only needing 7 ingredients and if you want to speed up the cooking time, pre-cook your pasta of choice so that all you need to do, is assemble and bake.

Eggplant Parmigiana

This recipe can easily be made vegan or vegetarian pending on whether you use plant based cheese or not. Again, this is another utterly simple cheesy eggplant dish that is always a little bit fun to assemble.

When serving I’ll pair it with a leafy green side salad and sometimes if I’m feeling a little extra hungry, I’ll grab a piece of bread and mop up any of the remaining sauce.

Chicken, Pumpkin & Eggplant Coconut Curry

This has to be one of my favourite curries in the KIC app. Don’t be intimidated when you see the ingredient list as it is rather lengthy. Without each ingredient, this curry wouldn’t nearly be anywhere as delicious. My advice is to just go with it – it’ll be worth it! Pumpkin is also a really affordable vegetable at the moment, which makes this curry a great cheap winter meal that also freezes exceptionally well.

Whenever we make this, I’ll always take my leftovers for lunch the next day and often because the flavours have had more time to develop, it tastes even better.

Harissa Eggplant, Sweet Potato and Chickpea Tray Bake

If you know me, you know that I love any recipe that is a one pot wonder or a tray bake. Why? Because I love food that’s yummy but also easy to make. Because let’s face it, who really has the energy to cook after a long day in the office?

What I especially love about this recipe is the harissa paste, which can be store bought and is usually made from dried chilies, garlic, olive oil, toasted cumin seeds, caraway seeds and coriander seeds. It packs a serious punch of flavour and a bit of heat to this dish.
